By growing plants between the rows of vines we regulate the air and water balance of the soil, promote the formation of top soil, ward off erosion and create an ideal habitat for beneficial organisms. Where necessary, organic fertilisers are used. The trend is definitely in favour of biological pest control.
The choice of grape varieties is determined by soil characteristics and the microclimate. Each grape variety has its preferred site.
In South Tyrol the classic training form on slopes is still the pergola, though the Guyot system – training on wire trellises – is increasingly used instead. On flat country and slight slopes the Guyot system is the preferred form for all grape varieties other than Schiava. This new form of wine training is not only more economical and requires less work: our wine growers have also resorted to it because it favours smaller yields with a higher grape quality.
Appiano, South Tyrol’s largest wine growing community, is favoured with some of the very best vineyards of the region. Our very special crus include Sanct Valentin, Schulthaus, Gleif and Montiggl, to mention only a few.
